You make a really fudgy type cake that is made with cooked beets. I have modified the original recipe and double the beets by adding 1/2 inch chunks. It really is super yummy!

Chocolate cake with beets? Well, if that don't beat all . . !
DW would probably go for that. She makes carrot cake, of course, but also potato bread and carrot bread. She keeps threatening to use those sweet beets for the bread recipe & I keep telling her that the color would be too weird!

Here is what I made for lunch. Real simple -- saut lots of carrots with onions. Usually, I also fry ground beef and then add a can of tomato soup. Today, I went with some of all this spaghetti sauce we made a few months ago. Everything goes in a casserole and 45 minutes later, you can use it to top a baked potato:
