Laetiporus is a genus of edible, bracket fungi that is commonly known as chicken of the woods, chicken mushroom, or chicken fungus. Why? Because it reportedly tastes like chicken.

The mushroom can be found growing in wooded areas throughout the world, usually on living or dead oaks, but is also found on other trees such as yew, cherry wood, sweet chestnut, and willow.

It is perfectly fine to eat and can be prepared in many ways like chicken, which it is also a good substitute for. In parts of North America and Germany, it is considered a delicacy.

It's not to be confused with lyophyllum decastes, or the 'fried chicken mushroom,' which has a faint radish-like taste.

How can it be confused with lyophyllum decastes, it looks nothing like it.
 
One of my favorites and real exciting to find. Usually more there than one family could possibly eat. I make a mean spinach and mushroom pizza with them. I hear on my mushroom group that a small number of people may have unpleasant reactions to the chicken mushroom, so as with any mushroom, best to only try a small portion the first time.

If we ever get rain.. I really look forward to this falls mushroom season. My favorite is the chanterelle's, but I would like to try the chickens if i can find some.

Oyster Mushrooms are another that grow on dead trees, and are very tasty..They can easily be grown at home on a section of log, that you inoculate with their spores.
