Blue potatoes sound interesting i might try some this year. I have to put my seed potatoes in a brown bag with either apple and/or other fruits that produce ethlyene gas which causes the potatoes to sprout the "eyes".

With potatoes, you actually want those dark green or purple eyes, not the pale, leggy ones you get from potatoes sprouting in the dark. We laid ours out on plastic lids in a sunny, cool basement bedroom and got wonderful dense sprouts. Good luck!
