well after work today i got a chance to do some canning (3 canners) = 21 quarts of soup.

also a 3 gallon churn full of 14 day pickles :cool:

it's a sweet pickle. kinda like bread and butter pickles. 14 day pickles have alot better taste in my opinion though.

on a side note it takes 12 days to make them - why they are called 14 day instead of 12 day i dont know. :p

i'm about to have to leave for work but if anybody wants to try them i'll try to get them the recipe tonight.

I'm not going to promise I am going to make pickles that take 12 or 14 days, but I would be very interested in seeing the recipe!

Both my mother and grandmother used to have very large stoneware crocks in the cellar where they brined pickles. They made 7 day pickles, 12 day pickles and 14 day pickles as I remember. That was always the womans job though so I don't have the recipes. I remember they were canned when they were finished rather than held in the crocks.
When the pickles were done they'd start making kraut in those crocks.

lesa,12 days sounds worse than it is ;)

hoodat,the recipe came from my grandmother (who turns 90 this year).where she got it i dont know.my mother has been making them since before i was born.also,im male - i just decided to have my mom teach me how to make pickles,jelly,preserves and to can before the knowledge is lost in our family.

so here goes:


14 Day Pickles
3 gallons of small to medium cucumbers (up to 2"diameter) cut into 3/8" thick rounds goes into a 3 gallon churn
in a large pot add 1 & 1/2 gallons of water and 3 cups of pickling salt bring to a boil
pour solution over the cucumbers -keep the cucmbers submerged uder the water (we use a small plate that will fit in the churn) wrap the churn lid with a dish towel.
let the churn of cucumbers stand for 1 week

Day 8
drain solution out of churn and rinse out churn.
wash cucumbers and put back into churn.
bring another 1 & 1/2 gallons of water to boil and pour over cucumbers - NO salt - just water
* note about cleaning cucmbers*
when you uncover them after 7 days you may think the cucumbers are no good - don't worry just wash them and put em back in the churn.

Day 9
pour water out of churn
in your large pot : put in 1 & 1/2 gallons of water and 1 & 1/2 tablespoons of Alum bring to a boil.
pour over the cucumbers.

Day 10
pour water out of churn.
in your large pot : add 5 pounds of sugar
1 tablespoon of Turmeric
1 tablespoon of pickling spice
2 quarts of Vinegar
bring to a boil and pour over cucumbers
*note*if the solution doesn't cover the cucmbers make a half batch of the solution

Day 11
drain churn into your large pan
bring solution to a boil
pour back over cucumbers

Day 12
drain churn into your large pan
put pickles into jars
bring solution to a boil
pour solution over pickles
seal jars

OK, 14 day pickles.... 12 days to make + 2 days to eat = 14 days:weee

I bought a 3 gal crock on e-bay and I was going to try some brined pickles this year.
