Both my mother and grandmother used to have very large stoneware crocks in the cellar where they brined pickles. They made 7 day pickles, 12 day pickles and 14 day pickles as I remember. That was always the womans job though so I don't have the recipes. on a side note it takes 12 days to make them - why they are called 14 day instead of 12 day i dont know.
