Anybody out there canning corn? Just curious....

I used to. You need a pressure canner. My favorite is corn relish--I have no recipe, it's just corn, apple cider vinegar, a spoonful or two of sugar to make it kinda sweet-and-sour, and roasted chopped jalapeno peppers to taste.

Coopy, do you use the slice of green tomatoes for yours? My mother always did. I haven't canned corn, merely freeze ours, but next year I am thinking of canning a few.coopy said:

We just freeze ours. It is a whole lot quicker and easier (if you have the freezer space).

Yep, kept the corn from turning brown and losing its firm texture. I freeze mine right now but I really like the taste of the canned better than freezing. Certainly easier than canning but I wouldn't mind having some in jars, cause ya' never know about those electric gadgets!coopy said:

I prefer to freeze my corn instead of canning it. I think that frozen corn tastes closer to fresh than canned does.
I have found over the years of my canning corn that it depends on the type of corn you can. Some of the corn will be tough after you can it. I have bought corn from an old farmer here for around 5 years now. I don't know what the name of the corn is but I intend to find out. It is the best canned corn I have ever put up.
Also some corns turn really brown when you can them. Mine stayed nice and yellow and has more of a fresh taste than others.

OK I would like to know how to can corn as I have a fabulous crop that will be ready soon. I do have a pressure cooker but I don't have the Blue Ball book with instructions.
