Anybody out there canning corn? Just curious.... 
Coopy, do you use the slice of green tomatoes for yours? My mother always did. I haven't canned corn, merely freeze ours, but next year I am thinking of canning a few.coopy said:Yes I canned 41 pints this year.
Yep, kept the corn from turning brown and losing its firm texture. I freeze mine right now but I really like the taste of the canned better than freezing. Certainly easier than canning but I wouldn't mind having some in jars, cause ya' never know about those electric gadgets!coopy said:No I just follow the directions in the Blue Ball Book for canning corn.
I would freeze it but just don't have the room.
I imagine she put the slice of green tomato in there for the acid content.
