Did my last batch (I think ;)) of salsa and did what Crazy Gardener suggested. I put the rack at the bottom and put in the jars into boiling water. I still didn't like the handles being down and having to work around those. Plus the rack is not totally flat because of the wire.

Next time I definitely want to try Ridge's suggestion of using my tamale rack at the bottom. That one is nice and flat.

The boiling water still scares me but it helps to turn it off when putting the jars in. A little less steam coming out at ya.
