The flowers are used for tea..either dry or fresh. It would be best to wait for them to be in fill bloom before harvesting. There's no known medicinal benefits, so I guess taste is what drives folks to it??
there's a good chance they'll still be around millions of years from now no matter what humans try to do to them. i find that thought somewhat comforting.
