One year, though, one of my Nubian bucks managed to breed all but two of my La Manchas. Here are some of the kids:

As of now we have 12 Nubians, along with 1 Toggenburgs and 1 La Mancha all are registered and milk from a 1/2 gallon to 1 gallon of milk per milking.
We also have two Nubian bucks and have access to Toggenburg, and a La Mancha Buck.

All I know is I tried my hand at some riccota cheese last night. It was really easy, I was quite impressed with myself. I highly doubt I will go any further then that now though.

It was simple enough to give me some confidence!


Recipe:

2 Quarts Whole Milk
1 Cup Heavy Cream
1/2 Tsp Salt
2 Tbsp Lemon Juice

Heat Milk, cream & salt to a full boil. Reduce heat to a low simmer, add lemon juice and give time to curdle (about 2 minutes). Pour through a sifter lined in a cheese cloth and drain for about an hour.

I let mine drain 15-20 minutes and squeeze out the rest of the liquid so the cheese was still moist and spreadable for lasagna.
