Favorite thing to do with tomatoes

Cut 3 pounds of roma type tomatoes in quarters.
Cut 1 large vidalia onion in chunks
crush and peel 4 - 6 cloves garlic

Spray two large oven pans or glass baking dishes with olive oil spray.

Divide vegetables on each pan.
Sprinkle each pan with 1 Tablespoon of balsamin vinegar and salt and pepper. Spray over the top with olive oil spray.

Bake for 1 hour at 375 degrees. Switching pans from top to bottom racks halfway through. One pan on top and one on bottom. Then trade places at 30 minutes.

Let cool about 1/2 an hour and run through blender or food processor.

Reheat in pot til bubbly. Serve over spaghetti or any other pasta.
 
We eat a lot of BLT's, make lots of Spaghetti Sauce and some Ketchup.

Meatless Spaghetti Sauce
30 lbs Tomatoes
1 cup Onions, chopped
5 cloves Garlic, minces
1 cup Celery or Green Pepper, chopped
1 lb fresh mushrooms, sliced
4 1/2 Tbl Salt
2 Tbl Oregano
4 Tbl Parsley, minced
2 tsp Black Pepper
1/4 cup Brown Sugar
1/4 cup Vegetable Oil

Wash tomatoes and scald, remove skins; core, cut in quarters. Bring to boil in a large kettle and cook uncovered for 20 minutes. Saut onions, garlic, celery or green peppers, and mushrooms in vegetable oil until tender; Add spices, salt, sugar, and tomatoes. Bring to boil, then simmer uncovered until reduced by nearly one-half. Stir frequently to avoid burning. Fill jars, leaving 1-inch headroom. Adjust lids, process at 10 psig (240 F/ 116 C) for 20 minutes.

Ketchup
6 lbs tomatoes
1 cup white vinegar
1 six-ounce can tomato paste
1 1/2 cups sugar
1 pouch Mrs. Wages Ketchup Mix for 5 pints.

For eating fresh we like BLTs, sliced tomatoes, green fried tomatoes, pastas w/fresh chopped tomatoes, garlic and olive oil.

We like to can tomatoes in 3 basic versions.:
- Whole or Crushed Tomatoes
- Tomatoes w/Peppers & Onions
- Tomatoes w/Corn & Okra

During the year we open these and add a few ingredients to make Chili, Pasta Sauce, Pizza Sauce, Soups or Stews, etc. I like that better than having a specific item like Spaghetti Sauce in the jar. It's more versatile.

And we do can these specific items in smaller quanities. :
- Peach Salsa
- Black Bean and Corn Salsa
- Ketchup
- Enchilada Sauce
- Salsa Verde
 
Before I make any sauce, salsa, marinated cherry tomatoes, can or dry tomatoes...dh & I have a tomato sandwich with plenty of mayonnaise or a BLT. Always!

When the harvest starts to dwindle, I freeze whole tomatoes, straight off the vine, in large Zip-Loc bags or plastic containers. Those will be my juicing tomatoes. Just thaw out a couple in the refrigerator overnight, then throw into the juicer with celery stalks and a few greens and you've got a fabulous taste of summer in the dead of winter. Much fresher tasting than V-8!
 
Got my first tomato about 2 weeks ago ..... wiped it on my shirt and ate standing in the garden, didnt even move.

I just ate a cherokee purple with a pinch of sea salt like it was an apple!!!

Other then a drippy mess, I'm happy!!! :D
 
Oh! I forgot, for my cherry tomatoes, I take fresh oregano, chop finely, mix with sea salt and dip the tomatoes in it, so just a little salt/oregano sticks to it, YUM! makes a wonderful appetizer! especially if you different color cherry tomatoes!
 
My DD and I love this strange combination: toast, peanut butter, mayo and a slice of ripe tomato on top. I know it sounds utterly weird, but believe me, it is delicious! Still waiting...
