fried eggplant melt some mozzarella cheese on them

@AMKuska might get to eggplant by a fried green tomato route.

Personally, I'm happy to skip over the green tomato road and arrive in the Eggplant City.

Haha! Actually I had to pick a bunch of green tomatoes to keep a greedy deer from getting them, so I actually am planning to try fried green tomatoes! Eggplant? Well...we'll see!
