Herbs as landscaping

Rosemary is nice. Here in the Pacific Northwest it grows like a hedge plant, about waist high or more. You can prune/harvest it to a nice shape. The woody stems make great skewers for barbequeing lamb.
 
We have wild mint that grows along our creek, I mow it, weed eat it and it still comes back, the chickens don't bother it other than looking for bugs in it. It always smells great when I cut it.
 
I think that mint can make a good 'landscaping herb' It can grow very long and smells really good when watered.....
