It doesn't turn to sugar, but it prevents your body from burning fat. Excess protein can be converted to glucose if you have too much at one time, but it doesn't convert easily and usually isn't a big issue for people. It's the flour, potatoes, corn starch, rice, etc... that most people think of as dietary staples but are just sugar in disguise.
