We are running a little distance from salsa but you guys are really on to something, here!

I didn't grow up with hot peppers in the garden. Using them after I began to grow them has usually just meant adding them to food while it is cooking. Still, I find myself using Tabasco sauce at the table . . .

I have used the purchased Sriracha sauce the cook in the linked article talks about. It is quite a bit too "garlicky" to my taste, however :/. And there is part of the problem, I'd be willing to mix the peppers with other things - it is just that I would want to be a little more of control of those added flavors.

And, I've wondered if I could make something that could be applied drop-by-drop (or squeeze-by-squeeze, as with Sriracha). I'm going to be looking for that special salt (powdered, as I understand it) to see if I can make something acceptable shake-by-shake, however. The advice I got on that was to mix finely ground, seeded peppers and salt with powdered garlic and onions. Having the right salt is supposed to be important to keep the ingredients from separating.

This is so much fun :D!!

I used honey instead of palm sugar and raw apple cider vinegar instead of distilled white vinegar. Based on the rate of disappearance, this will be a family staple from now on. Hubby and son #2 are hot sauce junkies :D

Taste Test, World's Hottest Pepper!

The guy wrote something about this taste test on his website. As best as I understand it, he makes pepper sauce to sell and this, sort of, amounted to "sampling the ingredients" before committing to a batch.

You may want to do as I did tho' -- leave the audio OFF!

Since we're experiencing a little "topic drift" I'll share a short story about one of my experiences with little red chillies about 15 years ago.

We always sun dry a bunch of our little red hot peppers for use throughout the rest of the year. One time while DW was gone for a weekend with the girls I thought I would try to reconstitute some of our dried peppers. I put about 10 in a small sauce pan with about 1" of water and heat it on the stove. I got side-tracked and forgot what I was doing. Soon a wonderful aroma filled the house but by the time I got to the kitchen the aroma turned to a more potent gas. Like a dang fool I removed the lid to take a whiff.

I woke up in an ambulance on the way to the hospital! A neighbor was walking by our house and saw me run out of the front door and realized that something was wrong. She came to me as I was falling in the grass. I could not breathe in or out. My throat was completely choked off. As I lost consciousness she was calling 911.

I spent two days in the critical care unit and two more days in the hospital room before they let me go home. I missed three weeks of work. I still have damage to my olfactory nerves and I still have various throat problems from my little bout with the chillies. If I smell someone eating nachos my throat closes tight and I cannot breathe.

My son has accidentally made pepper gas on a couple of occasions by throwing cayenne pepper powder in to a hot, dry pan. Yikes!!!

At least if there is a riot and I get pepper gassed, I should be able to laugh it off :p

I ground up 3 tiny chiltepin peppers for some stew last night in a mortar/pestle. I thought I washed my hands well afterward. Apparently not. I spent about 30 minutes doing a Popeye imitation.

As for making tabassco, I am just not patient enough. They age it for 3 freaking years!!! This is supposed to be a quick alternative...

Holy hot, Smiles!! I would think you would be turned off of hot sauce for life! Talk about too much of a good thing!

Well, I am sort of. I only taste it about once or twice a year. I keep hoping that my tolerance improves. It seems that some peppers affect me more than others.
