nacho, I personally don't think figs taste like fig newtons at all. I hate fig newtons yet I LOVE figs with bleu cheese! The taste is hard to describe. They are sweet and grainy (because of the seeds). I personally prefer the black ones. I can't think of what food they taste closest to.
