Mexican cold shrimp soup I'm in Heaven

I love it!

If your local mexican restaurant doesn't have the soup, they often have shrimp cocktail (coctel de camarones) that is very similar. Traditionally spooned onto crackers, you could also eat it as a soup if you wanted!


I wish I had those kinds of neighbors!

The neighbor lady just brought over some Mexican cold soup for me. It has shrimp, chopped tomatos, thin slices of cucumber and avocado, chopped onion and cilantro in it. Just the right amount of spiciness to wake you up without being overwhelming. I think I died and went to Mexican Heaven.

And thank you Hoody for giving me a new idea for supper tonight! We were going to have elk fajitas anyways so a side of cold shrimp soup with it will be perfect.
