DH doesn't like "leftovers" so bigger squash become chicken food after one meal.

Ooooh..lucky chickens..About the only thing they get from my squash are the seeds and guts..lol. It's rare here to have leftovers, that aren't consumed the next day.
Maybe you will have to disguise leftover squash in a soup, or stew to fool the DH into eating it.. It blends in well, and if you don't use to much of it in a dish, he probably won't realize he's eating it..

You could also try making a curry/squash soup, if he likes soup, curry, and squash..he doesn't need to know it's "leftovers"..
