LOL... when I eat salmon it's mixed up with some grated potato, diced onion, flour, salt, pepper; patted into pattys and fried up in the big cast iron pan...

Steve, you're getting close. It looked like that only a little thinner but it didn't have a mustard taste.

I was going to suggest that cornstarch was the thickener, too.
We usually eat salmon with ranch dressing that has dill weed added to it.

I was resisting the suggestion of mayo, although I kinda already did.

Hollandaise = Lemon flavor, right?!
