Short Season Corn Varieties?

SeedO, do you ya'll mill your own cornmeal? I use a Family Grain Mill and it will not mill flint corn without damaging the grinding burrs. I ordered Painted Mountain and it looks like a flint corn, but I am going to use Thistle's recipe for cornbread found here, plus a whole lot about Painted Mountain corn.

I've actually only grown corn once before so haven't gotten around to cornmeal yet. We've been worried that it would cross with the local Monsanto corn and we wouldn't be able to save seeds from it. Ma has an attachment on her blender that we grind our grain into flour in. (Blender, is that what the appliance thing is called? The machine has whisk-y things and a bowl on it.)
