We are big cornbread eaters! My recipe:
1 C Flour 1/2 tsp salt
1 C cornmeal 1 C milk
1/4 C sugar 1/4 C oil
2 tsp baking Powder 2 egg Whites, lightly beaten
Preheat oven to 400
Pour the oil into a 8" cast iron skillet, place the skillet into the oven,
Mix all dry ingredients in a med bowl,
Add milk and egg whites,
Stir, just to mix,
Pour hot oil from the skillet into the mixture and stir again.
Pour mix back into the skillet and bake for 20 -25 mins.
Steve, did you ever make it? I like cornbread I wonder if you can use the whole egg instead of just the egg whites? I don't like wasting the yolk. This idea has interested me since learning that the cornbread recipe used for years is for corn "sticks." Never used it for sticks but this would be the pan for them.
Remembered this thread for cornbread and Jeni Ann's recipe:
That thing is amazing.
