I love sun dried tomatoes !! Here they cost a small fortune for a tiny jar. I am wondering is there much taste difference between sun dried and dehydrated ?

I've never sundried them, just dehydrated them, so I don't know how much difference there really is. I do know that if you take a piece of dehydrated tomato and put it on your tongue to rehydrate you get a tremendous burst of intense flavor.

Of course there is a simple way to find out what you think about it, try it and taste them. I think you'll be happy with either one.

I wonder about your humidity for sun drying. I would think an oven on the lowest setting or with the door part open would be best.

I was part of a peach drying study at U of AZ in the dark ages, and we had to sulphur them to stop the browning. And in AZ things dried very very quickly due to the heat and zero humidity in Tucson.

I'd look for a dehydrator one sale bc somebody bought one, didn't use, and it's gathering dust. I got one of those, which is my 2nd dehydrator, just missing two trays, still works great.
I don't like the idea of dust and pollen and bugs getting on the stuff I would dry outside. I think I'll sun dry seeds, but not vegetables and fruit.
Everybody has an oven. :D
