I've just acquired several varieties of beans to grow. Typically grew up with the canned bean products so I've no clue how to best show off my dried beans in cooking dishes?? Do you all have a favorite dried bean you grow for a favorite dish? Thank you!
most beans are similar in flavor, but they can be distinctive enough in both flavor and texture that my favorite way to cook them is to get enough water to boil and then put the beans in and turn the heat down to a low simmer. stir once about every half hour or so. i don't spice them or put meat in them and we use them a lot for bean burritos, but also in chili or in bean soups or just eating them with a bit of butter on them. sometimes i may use a mix of bean varieties and other times it will be one or two varieties.
