What Purpose for your favorite dried bean? Soup Chili etc...?

I've just acquired several varieties of beans to grow. Typically grew up with the canned bean products so I've no clue how to best show off my dried beans in cooking dishes?? Do you all have a favorite dried bean you grow for a favorite dish? Thank you!

not really as i like them all. :) most beans are similar in flavor, but they can be distinctive enough in both flavor and texture that my favorite way to cook them is to get enough water to boil and then put the beans in and turn the heat down to a low simmer. stir once about every half hour or so. i don't spice them or put meat in them and we use them a lot for bean burritos, but also in chili or in bean soups or just eating them with a bit of butter on them. sometimes i may use a mix of bean varieties and other times it will be one or two varieties.

I think most beans can be used interchangeably for the most part. I like larger seeded beans in soup and stew, and tend to use smaller seeded beans for things like bean salad, burrito /taco filling, and things like beans and rice. Personally I do not like black beans, or any dark colored bean that stains the food you cook with them. But that's just me.

So many good dishes using dried beans...I really like a white bean 'hummus', where you don't use raw garlic but instead roast a whole bulb with the top cut off, and a tsp of olive oil added to the top. The roasted garlic goes into the white beans and gets whizzed together with salt and whatever else you want. Burgers made from beans, all the soups you can think of. I like stir fried cabbage cooked with tomatoes & cannellini beans, with some Italian herbs thrown in. I love cold mixed bean (kidney, chickpea, pintos, etc.) salad too!
