Salad with Pickled Beets

Yesterday I took this salad to "nosh" at our congregation. My salad greens are so happy this time of year!

I got the idea of using the juice from some pickled beets to make the eggs. Just put boiled eggs in a canning jar, and instead of throwing out the juice from pickled beets, pour it over the eggs and let them sit in the refrigerator for a few days.

Probably it would work with regular beet juice, just add a bit of sugar and some salt, if you just wanted some pink eggs, not pickled.

Are the eggs peeled when you put them in the jar?

Yes they are peeled. I think next time, I would leave them in the juice only long enough to make a pink outer ring, instead of the whole white of the egg being pink. I will have to experiment with them.

Ahh, that's a Pennsylvania tradition right there. Hardboiled eggs always go in with the pickled beets! Usually for a long time! That brought back lots of memories, i should make some! :)

I love pickled eggs! It's a tradition here too, everybody down to my great-great grandma makes them. We changed it a little by using duck eggs.

Nyboy, that is one of my favorite salads. A month ago I had a beet, goat cheese, persimmon, and pomegranite salad. It was delish!

Last night I went out to dinner had a beet and goat cheese salad was so good.
I can't stand "goaty" flavored goat cheese. I make my own goat cheese. And I think I have found the answer to the "goaty" flavor. TIME...

Though, I have found when I put cheese balls in oil in the fridge, they can last for weeks and weeks and not get "goaty"
