I'll reference the American Heart Association (LINK):

"Vegetables: 1 cup equivalent of vegetables is 1 cup raw vegetable or vegetable juice, 2 cups leafy salad greens.

Fruits: 1 cup equivalent is 1 cup fruit or ½ cup of fruit juice (orange juice, etc.) or 1/3 cup of a fruit juice blend."

Then, I will point out that the servings used are for raw vegetables and fruit. Cooking, we all learn that 2 cups of leafy greens will amount to a half cup, at most.

I used to try hard to have 3 servings of fruit before anything else, in the morning. That became difficult because of DW's increased tendency to cook hot cereal for breakfast. Anyway, I have no trouble having more than my 5 a Day of fruits and vegetables. It's probably more like 7 a Day.

i don't know... my diet varies quite a bit. recently we've been enjoying the melons so no shortage of fruit consumption. i normally eat a banana every morning, but with all the melons we've had i told Mom we sure don't need to buy bananas. today i had her pick up some bananas for the first time in a week or two. i like them with peanut butter and a small glass of milk. instant breakfast in a few moments and then i can get on with whatever else i was planning on doing or just autopilot for a while as i wake up. :)

during times when there isn't much fresh fruit available i like a few prunes here or there.

all year Mom makes salads quite often for her dinner and i'll sometimes have one but much smaller and not as many things in it. like i don't usually want cheese in my salad and i can put the carrots on the side which i would rather eat by themselves. no, i don't really know why but it might just be that i don't like the change in textures as i'm eating a bowl of salad and to be surprised by a chunk of carrotses. so i like them where i can see them and know what is coming. i guess... :)

tomatoes, a lot of tomatoes, and beans, of course. :) all forms of beans i like.

There is also a need for commitment. (just by writing that ;))

We promptly had smoke advisory after I wrote that with days and days passing before harvesting at the garden, today. This was also true for grocery shopping. We hunkered down with only the little backyard garden and the freezers we have been filling for veggies. Down to bananas only by yesterday, I had 3 for breakfast. Watermelon, this morning -- does watermelon have any human nutritional value?

Now I have cantaloupe from the garden. The supermarket we shopped at isn't the best for local produce but the store we visit tomorrow will have lots ... Yes, I should have had a veggie for breakfast but habits learned thru childhood are difficult to break. Vegetables for breakfast?! ;)

Why not? You can put quite a few things into an omelet... I chopped up some ripe peppers into my eggs this morning, and the flavor was wonderful.

Yes, @digitS' you can have veggies for breakfast. In fact right now I am eating spinach, swiss chard, and kale. Along with some blueberries, banana, and yogurt all in a smoothie made by my nutrit bullet.

I also try to have salad or a veggie for lunch and for dinner 1 or 2 more veggies. So I guess I eat anywhere from 5-7 fruits and veggies a day.

I think fruits or berries are a natural for breakfast. I try to have a citrus a day as a minimum. Melon, grapes, all kind of things. Potatoes fit right in too, especially hash browns or potato pancakes. about anything can go in am omelet.

Lunch is a bit iffy around here. I might have leftovers that have veggies in them or just make a sandwich if I don't have leftovers. Sometimes lettuce might go on a sandwich, maybe a bite of carrot on he side.

Supper always has veggies. What depends on what I may bring in or have preserved. I don't eat snacks during the day but my wife has two, mainly veggies.

I'm under the recommended number but when I'm outside I may snack on something in the garden, usually without rinsing it off. I can't think of anything better than a cherry tomato, really ripe and fresh from the vine.

But, @Ridgerunner . You should eat the potato skin ... some people (DW) have problems even imagining doing so ;). Here is something on that:

Yes, @Zeedman , I like peppers with my eggs but our pepper season is so short that I don't enjoy them often enuf. Chives, shallots, onions

Too much of a good thing isn't necessarily a good thing. If I'm getting enough I'm getting enough. I see no benefit in making my liver work harder than it has to to get rid of excess. I have no problems with skins myself, especially on new potatoes, depending somewhat on how they are prepared.

I have been known to chop fresh seeded peppers and freeze them on a cookie sheet, then put them in a zip-loc type bag so I can use the chopped peppers are I wish. If you are cooking with it texture isn't that important, flavor is. You may or may not like the skin on them. I've also been known to grill peppers and clean the skin off of them before freeing them. Oh, grilled peppers on a pizza or maybe in an omelet. With those I typically roll them up in wax paper before freeing and store those in a zip-loc. To use I just unroll what I need.
