What are you canning now?

I read that, too, not to boil the lids. I Will have DD's check for them at estate sales. I don't care much for going to them, but They do.

Here is the finished product, 5 bulbs turned into a 1/2 pint's worth. Plastic lid won't rust, ha, ha!View attachment 70753

I love garlic! I like to cook gourmet dinners and when the recipe calls for 2 garlic cloves I always put in a whole bulb!

Not canning, but eating from canning. I am making turkey soup/stew, no turkey meat, just cooked down broth (cooked down with onions, carrot scrapings, frozen and old celery). DH insists on soup, although I would like to thicken it up.
We are eating this tonight with one of the pints of applesauce I made a few months ago, AND, since I was low on carrots, I retrieved these two pints of pressured canned (2022) carrots I had downstairs. I gave them the sniff test AND the taste-a-carrot test. BOTH were very tasty! I poured off the canning liquid into the crock pot last night, strained the broth, and added cut up potatoes, onions and celery. (Carrots minus liquid went into the fridge.
I will be adding the 2 pints of carrots about a hour before serving since the canning process already cooked them.
I am about to make corn muffins, too.
I have bones from Thanksgiving and will start the next batch of turkey broth immediately, for canning end of the week.
I may add just a bit of salt, definitely add some pepper.

So, middle DD wanted chicken broth. Eldest DD bought me a 12 pack of drumsticks and I started the broth a few days ago. Plans for next week just changed--I will be doing a full day's worth of loan signings at same location on Monday

, so NO time to prep this weekend, what with today's office party, family Christmas get together tomorrow and other stuff.
SO... with the 6 chicken drumsticks cooking away for a couple of days in my canning crock pot, along with Lots of herbs seasonings, I was up at 1:15AM and decided to stay up and finish the broth, which was done by 3:15AM.
This morning I had to wash the jars--there was a little spillage before I put them in the canner--but they will be ready to pack up and bring for a Christmas present tomorrow!
8 pints, 6 for middle DD and 2 for Eldest DD, and 6 more drumsticks in the freezer for another batch soon!

Made a roast for New year's day and realized that I was low on beef broth, so I added steak bones (w/some meat attached) and a previous roast bones, threw back some small potatoes and carrots from this week's roast, left the onions, added one dehydrated garlic piece, since DD discovered how strong they are, and cooked them for a few days. Got up early this morning and decided that I had smelled eNOUGH beef broth, so I pressure canned this morning, now awaiting the canner to cool. I had to add some water to 3 jars, so I noted Where they were in the canner, so I can amend the labeling. ALL looks very rich! Just heard some lid popping!!

Time for me to fire up the canner again. I have a long list of things I’d like to can. Sweet potatoes is first, because they’ve been taking up counter space for weeks.

No photos but I pressured canned chicken broth last week.
Right now I have two crock pots going with turkey bones and quite a bit of meat attached from Thanksgiving.
The "canning gods" are making me make more broth bc the porch freezer was overflowing when I put the beef stew leftovers in there.
I plan to make myself turkey stew lunches out of the quarts which will be pressure canned by Friday.
Didn't realize that my new Christmas crock pot--told SIL I wanted another one--this Christmas she bought me an 8 quart one, without a menu, just the old knob to turn. They are now both cooking away.
Winter has it's advantages. Since we didn't top freezing temperatures, I was able to leave the 2 gallon bag of turkey bones, etc. on a chair outside of the freezer and it was refrigerator temperature.
It had been sitting there since Sunday night, still mostly frozen.
I have been freezing bags of carrot scrapings, past it (never slimy ) celery and onion pieces leftover from cuts for hamburgers, and I add those to my crock pots for flavor. I keep them in my kitchen freezer.
Interestingly, when I made the beef stew, I added 5 pieces of dehydrated garlic, which disintegrated and no intense bites of garlic, and small pieces of onion, which Totally disintegrated AND dehydrated tomato which also Totally disintegrated into the flour based broth, since we marinated the round steak and I seared it in butter after coating with flour.
I never knew that vegetables would do this!
You get all of the flavor and none of the bits and pieces.
Even the tomato seeds in the dehydrated tomatoes disappeared...

We are down to the last 30 or so pieces of steer--won't get the new one for a few weeks.
We are just about out of hamburger, still 8 packages of 18 count premade hamburgers.
We are experimenting with different ways to cook them, like using a pint of beef broth and making them into salesbury steaks.
Tonight we will have hamburgers with pepper jack cheese slices.
