What are You Eating from the Garden?

I've been eating quite a bit from my garden lately.
Coleslaw, collard greens, peas, romaine lettuce, salad bowl lettuce, cucumbers, strawberries, pickled beets, parsley, oregano.
Made pickled beets, I'm telling you, they are so delicious. 😋 Beets will be a regular for me every spring & fall.
I'm impressed with all this good homegrown food.
Tomatoes, bell peppers, onions, garlic, still growing, looking good.

Last time I pickled beets I added too much vinegar. What's your recipe?
And, is this for hot water bathing or for refrigerator pickling? Thx!
Also, I have been asking about when to harvest my garlic. I took scapes from my Great Lakes porcelain garlic 2 weeks ago, scapes from my German Red Garlic yesterday.
Any advice as to when YOU harvest? Thx!

Salt honey with half and half of apple cider vinegar and distilled water with a touch of cayenne pepper and garlic. 😋
And, is this for hot water bathing or for refrigerator pickling? Thx!

i've used the same recipe for ages. i cut off the ends of the beets and scrub them well so i don't have to peel them and cut them into chunks along with plenty of onions and then i steam them until they're done. adding vinegar, sugar and apple cider vinegar (no spices because nobody but me likes them in there). it is pretty much done to taste but vinegar to water ratio is i think around 1 to 5 or so (haven't made any in a while since my brother doesn't eat them any more and Mom also doesn't like vinegary things any more... :( ). it is easier to add more vinegar and sugar than to take it out so just start by adding some water and then add the vinegar and sugar to taste knowing that the beets will absorb some of them from the brine. i used to make a few dozen quarts a year.

I'm growing Artist Gherkins again this year, since they were so very productive for us last summer. This morning I ate a couple of small ones, and then I found this big one on the ground. It kind of became my breakfast.

Later we went out to a brew pub for lunch, and a guy at the next table had this huge jar of homemade pickles that the staff were raving about. The gentleman offered us a sample, and they were delicious. Kind of a pickle day. ;)

Not much is edible yet, but the fresh basil & cilantro is pretty darn nice. Cilantro especially, because grocery store fresh basil is pretty good. Cilantro, galaxies of difference home grown. I saved a ton of seed last year, but wasn't sure how good they were so I thickly seeded an 8 foot row out of curiosity. Oh my gosh, we'll all be sick of it I'm sure, the whole thing germinated and cilantro plants are popping up everywhere from dropped seed last fall! lol

That's a LOT of cilantro! Lol. One of my garden paths is solid cilantro from dropped seed as well. It's flowering right now, and it's very pretty.

I donated a bunch of cilantro seed to the local seed library last fall. Recently the librarian advised me that when she went to package up the seeds this spring they were full of weevil holes-- so all of it had to go in the garbage. I didn't think bugs would attack cilantro seed in storage, so I didn't freeze it before donating the seed. This year I will be sure to freeze the seed for a week as a precaution.
