I do that every year when swamped wth too many tomatoes. We use them up within 6 - 8 months and it works fine, taste holds well.
When you thaw them, the skins slide off easily. I prefer to remove the skins when they're about half thawed. At that point they're still firm enough to work with...
You can dehydrate cucumbers. They're sort of like dried zucchini slices. Use them as chips for snacks or dipping. For variations, you can season them with season salt, plain sea salt, lemon pepper, etc.
We grow these and really like them. We're planting more this morning for Fall green onions. These will be in a different area than our regular "patch". We won't let them mature, but will pull them all as green onions.
I hadn't thought of using the bulblets for cooking. I may do that...and even...
I really like the looks of those Black Hungarian peppers. I may try those for next year. A dark sweet pepper is hard to find. Are they good to eat while dark? Or best when left to turn red?

I ended up making a "plain" Nectarine jam (no spices). The nectarines were 8 cups chopped, and with 1 cup apple juice added, it made 2 batches. That fit better than having nectarines leftover for the spiced recipe. And besides, I sell most of my jams - the plain ones sell better than spiced...

I always can some pears in light syrup. Also, I make pear pies and can pear pie filling for Winter use your favorite apple filling recipe, but sub the pears for the apples. We also like pear butter like apple butter, or peach butter, but using pears.

- mix crushed pepper with chicken feed to increase the birds' metabolism
- mix crushed pepper with wild bird seed to keep squirrels...
