Due to money we did not have enough to purchase the lumber or what ever to make a raised bed so we did recessed beds and they did quite well but then again we are in the desert.
When I water mine I use the Miricle grow sprayer thing and it does knock the tops down but it does not take long for them to pop back up. I even had some this year that I forgot to water for a little while and were pretty wilty and just gave them a good dose of water and they came right out of it.
I love how you did your squares as individual squares. They look great. We just added a dripper out of pvc to our squares and no more need for the dividers since it is now divided by the pvc.

One of my friends does worm composting as well but he said he just dumps his upside down for a couple hours or so to get the castings then starts the new bed for them. So I am anxious to see how you do this.

I have never tried the tops usually they hit the compost or chickens. Ya must want to eat the super young ones cause my greens get kinda spiney. But then again this was my first year for turnips as well and I really did not care for the greens but they to were/ are not new sprouts.

Saving pepper seeds--- I am going to have to disagree about the letting them stay on the vine. I bought some bell peppers at the grocery store a couple months ago, saved the seeds drying them only a day or so then popped them into the garden and they are all sprouting nicely.
Personally I really dislike roses due to the pruning thing so take my advise with a whole lot of salt cause I am no expert by any means.
But about 3 years ago I started managing a feed store that had roses everywhere none of which had been taken care of for several years and were very tall...
Oh I agree Hay is expensive and will mold and such so check out the prices for straw as it is usually much cheaper. I manage a feed store and down here in AZ Hay is up to 13.00 a bale and staw is around $5.00 big difference.
