Today I was inspired by Nyboy to make chicken soup. I had a roasted chicken that we had barely touched. I was going to make chicken quesadillas for the kids but decided that wouldn't use up much of the chicken, so I made soup instead. I put in potatoes, carrots, zucchini, kale, and brown rice and it was delicious.
Steve also inspired me to make stock with the carcass! I remember that for beef stock he said he throws in some veggies so that's what I did. I wasn't sure how much water to add but I let it simmer for a couple hours. I froze 2 1/2 pints of broth!
