I don't think everything I need would make it into the jelly before it was all gone from my glass! LOL
 
Some other flavor ideas....

Thyme jelly- use apple juice as a base, for meat glaze or dinner rolls
Hot Pepper Jelly - this sells very well for me
Three Berry Jam - Strawberry, Blueberry, Blackberry, add Raspberries for a Four Berry Jam
Corn Cob Jelly - an infusion from boiling the cobs in water, tastes a bit like a honey or flavored apple jelly
Orange Marmalade
Persimmon Jam (if you can get the fruit)
 
Jalapeno jelly is big out here in Colorado too. I might need to learn how to make this. I have Serrano and Chilitepin peppers this year. BOY ARE THEY HOT!!
 
I've purchased cabernet sauvignon jelly before. It was very good. It had a very subtle cab flavor. I don't remember the type of fruit that was in it though. Just an idea.

I've been canning jam all week trying to catch up and I just can't get ahead... so I shouldn't complain. ;)

I am trying to come up with a new jelly... and after a little night of drinking, I'm thinking a mojito jelly would be nice!!! :D
I've had that flavor actually :) It is quite wonderful!
