Microwave Brownie in a Cup

I have all this sweetcorn ...

Cornbread with whole kernel corn ...

I've got it on TEG somewhere as "Mexican" but it's a real dessert bread with lots of eggs and no peppers. If we hadn't made carrot cake today ... well, why not? It would be nice for breakfast tomorrow .

And, how about chocolate cornbread?

Haven't done any baking in awhile but when I saw this, I thought of Bay' and this thread.

Not for me, of course, but I like my friends to be happy and if chocolate helps......

Almost sound delicious. Can't get past the chocolate though.

I've had something like this chocolate/black bean muffin ..

. and, I can't remember what it was. It was probably some snack from a health food store.

It's encouraging, for this chocolate aficionado, that the kids can't taste the black beans.
