Coconut Curry Chicken

You will also need a rice cooker...

In the crockpot:

2cups chicken broth (makes it a bit more 'soupy' - just add 1 if you want it thicker)
1 can coconut milk
1 can diced tomatoes (do not drain)
1lb cubed chicken
1 cup diced red onion (I Love onion, use less if you don't)
2 tablespoons tomato paste
2 tablespoons curry powder (I like it stronger, use less if you don't)
** Add all and mix well - set on low for 8hrs

In the rice cooker (shortly before serving) :

2 cups chicken broth
1 cup quinoa
** Let it do it's usual dance

Just before serving - take as much fresh baby spinach as you can stuff into the crock pot - stuff it in and stir gently until it wilts in that wonderful curry sauce... mmmmmmm
Then spoon over the quinoa.

Another fave:

Rosemary Garlic Pork

Mix up 2 tablespoons of olive oil & a teaspoon each of rosemary, thyme, salt, pepper
Rub this all over a pork tenderloin
Using a sharp knife, make a slit about every 1/2inch in the tenderloin and insert a clove of garlic (yeah.. I know, sounds like a lot - trust me it'll be ok)
Spray a medium crock with cooking spray and drop the tenderloin in
Place several small, washed but otherwise plain'ol sweet potatoes on top - just cover the pork with them
Set on low all day while you're at work.
CAREFULLY lift the tenderloin out - it will want to fall apart - pour the juices over it & slice - serve with the sweet potatoes

This looked like such a good idea, I made it yesterday for dinner (with rice)!

My problem was that I didn't read far enuf in the recipe to see that it required spinach, and a lot of it! After I started to make it, I learned about the spinach! I had the choice between beets, bok choy and cauliflower ... went for the cauliflower.

Today, I asked DW if it was good enough that I should save the recipe. She said that it was good but I should leave out the cauliflower, next time ... Shoot! So much for trying to be creative. Next time, spinach. (Good thing I don't have any of that edible amaranth.)

chuck roast on sale 2.89 this week, going to pick up a few, doing the balsamic roast Saturday....

chuck roasts are one of those cuts of meat that are perfect for the crock pot and a big pot of stew....
@ninnymary @Nyboy make sure you get hidden valley ranch original.....
