I read a post concerning Gluten some time ago. The man was traveling in Europe where the fresh breads were still warm and on every corner of the cities. He was sensitive to gluten and decided to suffer the consequences and enjoy the delicious breads. Surprisingly he had to reaction to all of the European fresh bakery breads. He had no explanation.

Just a guess.. but maybe the flour - how it's produced, how it's stored...
