Hey Petey, how do you do your beef dip and burrito meat? That sounds really good! I have a hard time deciding what to make with some of the chuck and blade roasts and I have a lot left in the freezer.
Here are the two recipes I use. For both of them, I toss everything in the crockpot and just cook enough to sort of break up the meat a little and let the flavors blend. Then i pressure can it in qts for 90 min.
Monday: picked a gallon of huckleberries and another of elderberries, made elderberry juice, froze the hucks.
Tuesday: made elderberry jelly, 17 jelly jars
Wednesday: 5 quarts of tomato sauce with romas from the store...not enough room in my garden for that many plants. Still have tons of tomatoes left for salsa, not sure when i'll get that done.
