Bid..That sweet potatoe pie sounds so easy to make. I love jams and sweet potatoes. My daughter's boyfriend is bringing a sweet potatoe pie so I won't be making one but sure will keep your recipe!

I think I'll try your casserole. My son loves things like that. Now I have to go back to the store to buy more jams. I only bought a few since he and I are the only ones that like yams. But I want to be prepared in case the others can be tempted with your casserole.

Here is a Sweet Potato Pie and Candied Sweet Potatoes Recipe --

Sweet Potato Pie --
2 cups Cooked Sweet Potatoes [see note at bottom of page]
1/2 cup Brown Sugar
1 tsp ground Cinnamon
1/4 tsp Nutmeg
1/8 tsp salt
3 slightly beaten eggs
1 cup butter milk or [wiping cream]

For filling,
In large bowl stir together Sweet Potatoes, Sugar, Cinnamon, Nutmeg and Salt.
Add Eggs then beat with fork until combined.
Stir in butter milk [or wiping cream] until combined.
Pore filling into pie crust and bake at 375 for 35 to 40 minutes or until a knife inserted in the center comes out clean.
Cool for 30 for minutes and refrigerate with in 2 hours.

Candied Sweet Potatoes --
4 medium cooked Sweet Potatoes [baked just till tender]
1/2 cup Brown Sugar [packed]
4 Table spoons butter
Put Sweet Potatoes in a 2 qt baking dish. Add Brown Sugar and melted butter, stir gently to combine Bake at 375 for 30 to 35 minutes.

*Note -- Sweet potatoes tend to take in a lot of water when boiled so for best results bake the sweet potatoes @ 425 for 40 to 60 minutes (or until soft).
