Zucchini Fritters

Annette, here is another version of the fritters. It's the one I used.

5-Ingredient Zucchini Fritters

4 cups shredded zucchini (2 medium size zucchini)
2/3 cup all-purpose flour
2 large eggs, lightly beaten
1/3 cup sliced scallions (green and white parts)
salt and pepper

Place shredded zucchini in a colander and over a bowl and sprinkle lightly with salt and let stand for 10 minutes. Using your hands squeeze as much water as you can and transfer to a large bowl.

Add the flour, eggs, sliced scallions, 1/4 teas, salt and 1/8 teas. pepper and stir till combined. Form into patties and fry for 2-3 minutes then flip and cook for an additional 2 minutes till golden.

Serve with a dollop of sour cream if desired.

Thanks Mary :hugs, I'll try your recipe too. I make zucchini bread and have used it other ways but strangely have never made fritters.

They were so easy to make. The shredding took the longest. I amended the recipe to show 2 medium size zucchinis. You can pretty much eye ball it and I think they would still come out good.

With a little luck, I will have zucchini soon. I am certainly going to try this. @seedcorn, does the Old Bay seasoning add a lot of flavor? I think I have a container of it but it is old, not Old. Need to buy some fresh.

Oh yes. Make ramulaud sauce, it is similiar to bad crab cakes. We love it. Look up imitation crab cakes on Internet. Even if old, probably good unless sitting out.

I've planted zucchini 2X and 0 plants up.

Funny have to chime in, since I have been very small we don't shred the Zucchini all other
parts the same fry just to brown... Never over fry :lol:
