    Pepper jelly

I sell jellies at a farmers market. I try to make different levels of heat for my customers just like you. Some folks like the idea of pepper jelly, but want almost no heat. For some, the hotter the better. I made a REALLY hot Thai pepper jelly last year that almost flew off my table. This year...

    Hiring Friends Brother

I learned my lesson on this same subject. Had a down-on-his-luck veteran who lived in the neighborhood. He was in a wheelchair, having lost both legs. I had previously given him some home-cooked meals & we became "friends." He saw me weeding the front garden one day & asked if he could do it for...

    Heat/Lights for Seed Starting

Last year was the first year I tried starting my veggie seeds for seeds. Mostly some tomatoes & peppers. Nothing was too successful. The seeds would germinate, and would get one or 2 true leave and then sort of stop growing. They didn't die, just looked sort of pathetic. I used a heating mat &...

    Chicken Math

Monty. Thanks for the info on integrating additions to a flock. I plan on getting about 5 new chicks to add to my existing 10 month old group & wasn't quite sure how to do it. I'm on my 2nd group of chickens. When the first group starting slowing down, I knew I had to do something. Like you, I...

    Anyone Convinced, to grow shallots?

My short-day onions worked out great last year. I grew Southern Belle Red and Texas Legend from Dixondale. My first time growing those also. They grew beautifully & were large & delicious. Shallots & garlic are a completely different problem. I just think it doesn't get cold enough for them to...

    Anyone Convinced, to grow shallots?

Here in the south, New Orleans, I just can't grow decent garlic & shallots. Last year, I seriously tried to grow garlic. It looked beautiful, but just developed into one big bulbs. It tasted great, and I dehydrated it all to make garlic powder. But I wanted garlic that looked like garlic. My...

    Canning Dried Beans Potatoes

I've been experimenting with canning red/kidney beans lately. After doing research, I found there are about 3 basic ways of preparing them. Soak overnight, boil & soak for 1 hour, pack raw beans directly in jars. I've had some spare time lately, so I decided to try all 3 methods. 1. Soaked 1...

    Composting in place?

I have 2 beds that have field peas tight now. The peas are about at the end of their production. I'm planning on planting bulb onions in these beds come January. I thought I might just cut the peas down & pull up the plants & let it lie there for the next several months until it's time to plant...

    Something's Attacking My Fig Tree

Could it be that the fig is dropping its leaves for the winter? I have a couple of fig trees & the leaves are beginning to fall even though I'm in zone 9 and it's still pretty warm. There is a disease called fig rust. See it here...

Blueberry Cordial Liqueur Update post #29

I have a gallon jar of blackberries and one of strawberries sitting in vodka right now. The strawberry has to sit until 10/04, and then I strain & add in a simple syrup. The blackberries are supposed to be finished by 11/08. I can't wait to see how they turn out. Jo-Ann

For all you tea junkies......canned iced tea concentrate

I think tea may be too low in acid to can at home - the ph is around 7.2. If you ever noticed that commercially canned ice tea is very lemony to reduce the ph.

    Battery String Trimmers

MY DH has a really big, really heavy string trimmer that's just to heavy for me to use. I'd like to get a battery operating one for doing light trimming in my garden area - around the raised beds & in all the little corners & pockets a mower won't fit. I've used a corded electric trimmer before...

    passion fuit

It's amazing what hurricanes/floods will bring. After the Katrina flooding, in New Orleans we started seeing all sorts of things in the garden that we know we had never planted. Sunflowers were everywhere. Also a lot of rain lilies & naked ladies. And amaryllis was everywhere. Luckily (??!!), we...

    Am I doing something wrong?

Something simple - make sure the bag is in the vacuum area. With mine, it's about an inch or so in front of the sealing strip.
