Persimmons - What to do with them?

One of my parents has 2 persimmons trees and has given me some. I plan to make some persimmon bread today but what else can I do with them? I don't want to do jam. Can I freeze them? If so, how?

Persimmon pie? Cake? Cookies? Dehydrated to use like dates? Maybe spread the pulp out on a sheet like a fruit roll up. Spread cream cheese on it, roll up and slice, put on a snack tray.

:D I don't much care for persimmons either and never much heard of anyone doing anything with them except jams, jellies and wine.

Bee, have you ever had persimmon bread? It's really good, kind of like zucchini bread.

Oh.

I like persimmons but I knew nothing about them 10 or 15 years ago. Now, I happily await their season.

I'll be no help. I just watch the persimmons until they just begin to soften - then peel and eat them raw.

Do persimmons grow in Indiana? Or, was this while you were an unrepentant Southerner, @seedcorn ?

I don't know that I have ever seen a persimmon tree ... maybe only in my dreams.
