Fresh eggs... Toasted egg sandwich for dinner :)

I sliced homegrown 'maters and put them on my McDonalds double burger.

And you though those things couldn't be improved upon... ;)

Tonight it is a salute to my dear departed friend from Santa Fe..I am mixing Pacific NW via my garden with the New Mexican chiles and a very nice grassfed pot roast ..
it tastes wonderful and the house smells very comforting right now
what a nice dish this is

all in a Dutch oven

browned pot roast cut of your liking ..I dont know what this is the our butcher calls things different than I do I think ..
a head of garlic (mine)
olive oil
a bunch of (my own) cherry tomatoes
1/2 bottle of Chianti
2 cups chopped New Mexican green roasted green chiles
1/4 cup New Mexican red chile
1/2 a jar of seedless (my own) blackberry jam
lots of salt and fresh cracked pepper

it has been cooking until the meat shredded now I am going to add some new potatoes and serve with avocados limes fresh chopped garden mint parsley and cillantro
and tortillas

the last of the figs for dessert and hopefully eat outside while we still can :)

I made spaghetti sauce. Started it last night using tomatoes, zucchini, onions, garlic and peppers from the garden. Finished it off this afternoon with basil, marjoram and thyme. Served with home made bread.

I have enough red ripe San Marzano's to make a perfect marinara so tonight it will be HIdeLIGHTED on a thin crispy very healthy pizza

good crispy crust....brilliant sauce made with fresh tomatoes and the best of olive oil only (cooking technique is everything here!) and fatty stretchy cheese

suck your thumb and twirl your hair time :throw (trying to exert self control and only eat a piece or two is the hard part!)


I challange myself to get the perfect crust I use concrete tiles in a blazing hot oven

toss cornmeal on the tiles after they heat completely then toss my crust (nothing but flour, yeast, salt and water)

I shoot for chewy bubbles in a thin crispy crust

bake the sauce on the crust then add the cheese last so it barely browns

anyone else a pizza purist? or practicing the art/science of pizza?

oh it is good to keep a "mother" dough going at all times ..different from sour dough I just save a hunk of the dough and start the next batch with that
