What did you can (freeze, dehydrate, preserve) today?

today I made 8 pints and 1 Qt of sweet pickle relish, put 1 Qt of Squash in the freezer and have tomatoes to do tomorrow.

I've not tried it yet, so I don't know how these will turn out. Mine still need to set for 2 more weeks.

CYPRESS INN GREEN TOMATO PICKLES

1 gal. small green tomatoes
1/2 gal. sweet white onions
1 c. hot green pepper, chopped
3 c. sugar
3 c. vinegar
1/4 c. salt
1 tbsp. salt

Quarter tomatoes, chop onions in chunks about the size of prepared tomatoes. Bring peppers, sugar, vinegar, salt and black pepper to a boil. Add tomatoes and onions. Bring to a boil again and cut off fire immediately. Put in hot jars and seal. Let cure 2 - 3 weeks before eating. DO NOT OVER COOK or pickles will be too soft.
 
Thank you, Punkin! I love green tomatoes pickled! But I've never had them done like this. The ones I eat are generally whole, or halved, with salt brine, garlic and dill, I believe. I'll have to try these! :)
 
8 jars black raspberry jam, 6 jars red raspberry jam and 3 pints red raspberry sauce--yum!

That green-tomato pickle recipe sounds great!
 
just got blueberries, my son had such success drying apples last fall we wanted to try some blueberries. we'll try them tonight.

8 pints of corn salad and 5 1/2 qts. of freezer tomato sauce (the tomato sauce tastes so good, it my not make it for winter soup making ;) )
