That is what i would call a garden salad
You have your pick of salad dressings but I prefer to make my own, for this type of salad...
Extra light OO
White wine vinegar
Salt and Pepper
A dash of hot mustard
Several pinches of sugar
Sometimes I add some diced shallots or Parmesan cheese.

Olive oil and diluted red wine vinegar is the dressing we use all the time. Never get tired of it.

I'd have sent that "salad" back too...cost them a few cents to make and has little nutritive value. If they are going to be costly, they will need to be more trendy and have fancy locally grown mesclun mix lettuces, spinach, goat cheese, scallions, baby Asian greens, heirloom tomatoes, etc. for a salad.
